At the heart of Chiostro dei Domenicani is Gimmi, a Michelin-starred restaurant led by executive chef Donato Episcopo. The kitchen pays tribute to Salento’s culinary roots, with each course layered in memory, experience, and a few unexpected twists. The result? A menu that feels both rooted and refined. For weddings, Chef Episcopo works closely with each couple to create a personalised menu that reflects their tastes and the region’s best ingredients.
